Peppers come in a wide variety of colours, including white , yellow, and even purple , as well as green and red.The difference between them is in their botanical variety and in their degree of ripeness. Green peppers ripen to red while white ones ripen to orange or purple. Red peppers which are also called pimientos, and the purple ones are the sweetest because they are the ripest. All peppers are rich in vitamin B.

Buying guide : choose firm, shiny fruit with no wrinkles or soft, pale patches.

To use: remove the pith and seeds , then slice or dice. Use raw in salads or add to soups. Or cut off the the tops and leave whole , remove the pith and seeds, blanch, stuff and bake.

Storage : keep whole peppers unwrapped in a cool place or in the refrigerator for up to one week. Once cut, wrap and refrigerate.

To freeze : to freeze pepper slices which will keep for up to 12 months, blanch in boiling water for 2 minutes, then open , freeze until solid. pack in polythene bags , then seal , label and return to freezer. To serve : use from frozen in cooked dishes.
